Jackfruit Pulled Chicken

Jackfruit Pulled Pork

Equipment

  • 1 medium sized bowl
  • 1 baking pan
  • 1 silicone sheet (optional)
  • 1 food processor (optional)
  • 1 sharp knife

Ingredients

  • 1 14 oz can jackfruit, drained (in brine or water--not syrup)
  • 1 small onion, thinly sliced
  • 1 bottle BBQ sauce

Instructions

  • Pulse jackfruit lightly in food processor just until large chunks are gone. Do not pulverize! Alternatively, jackfruit can be shredded using two forks or sliced into strips with a sharp knife.
  • Transfer to a medium-sized bowl. Add onion slices and 1/2 cup of BBQ sauce, tossing well to coat.
  • Transfer to a baking pan lined with a silicone sheet (silicone sheet is optional but works great to reduce sticking). Spread into a 1/2 inch layer, breaking up any large pieces of jackfruit that may remain.
  • Bake in pre-heated oven at 350℉ for 45 minutes. Stir and bake an additional half an hour until browned and caramelized.
  • Drizzle on additional BBQ sauce to taste. I like a lot!
  • Serve as a side dish, on lettuce, on a bun, or on toasted bread slices. Great topped with coleslaw!

Notes

If you are cooking for someone that doesn't like onions, omit them or brown separately on stovetop.
Stores well in the fridge or freezer.
